I am an absolute foodie and don't believe in depriving myself, rather I embrace all the food groups and eat the best Mother Nature has to offer. However I do choose foods for their nutrition as well as their taste. I do need a gluten free diet and I have a nut allergy, so I totally understand the challenges free-from cooking can present, but I don't think it needs to be an obstacle to delicious, health giving food.
This salad is something I made recently and it was such a hit that I thought I'd share it with you. It's packed with goodness and super healthy. It is gluten free, nut free and if you dress it with a vinaigrette rather than the yoghurt dressing it would be vegan and dairy free too.
Super Food Skin Loving Salad Recipe
Serves 2 people with left overs.
Chop half a small squash, 1 red pepper, 2 beetroot and 2 red onions, toss in oil (I use rapeseed) and a crushed garlic clove. Oven roast until soft and toasted at the edges.
Cook 2 handfuls of quinoa in good quality stock, as per the packet ingredients. Drain and cool.
Chop an avocado and toss in lime juice. Finely chop a red chilli.
Drain a tin of chick peas. And rinse a bag of baby spinach.
Mix the whole lot together in a large bowl.
I served mine with a yoghurt dressing; 100ml natural yoghurt mixed with 2 tbsp rapeseed oil, 2 tbsp or red wine vinegar and seasoning. A vinaigrette or your favourite dressing would work too.
It's tasty on it's own or is great with halloumi, chicken or salmon, if your diet allows.
