Our Favourite Vegan & Gluten Free Blueberry Pancake Recipe

Here at Myroo HQ we LOVE pancakes! So it seems only right, with Shrove Tuesday only a few weeks away on 13th February, that we share our favourite pancake recipes!

"Pancakes with no eggs or dairy?", I know, I know. "I need gluten free though, so no pancakes for me". No problem, we hear you and as usual we've got you covered too!

We absolutely love the Minimalist Baker. It's a plant based blog with loads of gluten free options and straight forward recipes. There are loads of her recipes we could recommend, but lets stay focused on the job in hand, namely blueberry pancakes.


Our favourite pancake recipe is based on the Minimalist Baker's waffle recipe. It makes a fluffy pancake rather than a crepe but we love them at Myroo HQ.


  • 295ml of soy milk of gluten free oat milk* + 1 tsp white wine vinegar
  • 60ml olive or rapeseed oil
  • 60ml maple syrup 
  • 70g oats, gluten free if needed
  • 145g flour, we use a mix of gluten free blend and a little buckwheat to up the nutritional cont
  • Handful of fresh or defrosted frozen blueberries
  • 1 tsp of vanilla extract
  • 1 1/2 tsp baking powder, gluten free if needed.
  • pinch sea salt

*We've tried other milks and they don't work as well in this recipe.


  1. Mix the milk and vinegar well and leave to curdle for a few minutes. Then mix in the oil and syrup.
  2. Mix all the dry ingredients together in a large bowl.
  3. Add in the wet ingredients and the blueberries, then mix well. Leave to thicken for a few minutes.
  4. Lightly oil a large non stick frying pan. And put on a medium heat.
  5. Once warm, place heaped tablespoonfuls of the batter into the pan, spaced out. You will need to cook the batter in batches.
  6. Once the wet surface of the pancake starts to bubble, flip and cook the other side. They will rise and fluff up nicely.
  7. Keep the cooked pancakes in a warm oven while you make the rest.

I believe that pancakes freeze well for a couple of months, but there are never any left here to test that out!
